I just received a dehydrator from my mom and it’s seriously so much fun. Everything is really easy and it adds a little something extra to my meal and snacks.
This past week Jon and I found some bananas for $5/case. Which is 40 lbs of bananas for just $5! We couldn’t pass up on the opportunity so we got two. We already had two pretty ripe cases at home. Since I just got the dehydrator and really wanted to use it, I decided to put some of our ripe bananas to good use.
First you peal the banana and stick your finger at the bottom of the banana. If your fruit is properly ripe then the banana will split into three pieces quite easily. After you’ve split the bananas lay them out in your dehydrator. I filled up all of my trays and dehydrated them for 12-15hrs (I made a few batches) at 135 degrees.
After the time is up, enjoy your delicious snack. Or take some frozen bananas, dates and strawberries and blend them in your blender to make ice cream. Use the dehydrated bananas as a nice yummy garnish.
I have a few more recipes I’m trying out right now, so I’ll let you know how they all go!
One of my new favorite things is to blend 8-10 bananas and carob powder. Carob powder has so many great nutrients and no caffeine. It contains a number of nutrients is high in fiver and vitamins A, B, B2, B3 and D. So for anyone living in a not-so-sunny place and craving some vitamin D, just eat some carob. For all of us HCRVs out there, carob is a pod from a fruit tree. The pod is roasted, so technically it’s not raw. Then the pod is ground into a powder and VOILA! the best chocolate substitute out there :)
Tonight’s dinner:
Mixed greens, 2 green onions, yellow pepper, tomatoes, cucumber and peas
Dressing:
Mango, dill, basil, 4 dates and lemon juice
Breaky - 8 bananas blended
Lunch - 8 bananas and 10 dates
Dinner - Salad, apples, peppers, tomatoes, green onions, craisins and the yummiest dressing ever
Dressing - Blended 1/4 avocado, 4 dates, fresh dill (my new obsession), lemon juice and water
Total calories - 2,734
Feeling much better physically getting in this much food. At first 2,000-2,5000 was a struggle now I can easily get 2,500-3,000 :) Woohoo!
So it’s been a little while, I’ve been busy with work and my yoga studies so I apologize for the time lapse. I’ve been following 80/10/10 pretty much 100% since December 7th. I had a few pickles here and there and mustard, but everything else has been only fruits and vegetables and the odd bit of nuts.
I feel like my body has finally started to adjust and I feel consistently better. My weight went up and down the past few months. I started at about 118lbs and then at tone point the scale said 123lbs and the at another point 116lbs. I’m not exactly sure where I am, but I feel as though things are sorting itself out. I trust the process and have become more of the witness to what my body is doing with no judgement or frustration. I enjoy eating all the fruit I can possibly fit into my stomach and the energy that it gives me. My skin has gotten consistenly better as well which is awesome!
I’m excited to see what the rest of the year holds. I’ll update some photos of yummy recipes soon :) Until next time, happy fruit eating!
