This summer has been really busy and wonderful. I’m spending the month on a small Island called Mayne at my parents place. We hosted a lot of people here for a musical week and there is a TON of food left over. I found one of my new favorite websites www.ohsheglows.com and found this great no-bake recipe to help put to use some of the many ingredients I have here with me.

Yield: 12 small bars
Ingredients:
Nutritional info (per bar, makes 12 bars): 155 cals, 6.9 grams fat (1.9 sat fat), 21 grams carbs, 3.5 grams fibre, 13 grams sugar, 4.1 grams protein.
Breakfast - 1/2 cup oatmeal, apple, 1 tbs peanut butter
Workout - 6 mile hill run finished in 54 minutes :)
Post workout snack - 2 slices of lentil bread with 1/3 cup egg whites, 1/3 avocado, salsa and mustard
60 minute hike
Lunch - Protein shake with berries, banana and vegan protein mix
Nap 1 hour
Dinner - Spaghetti squash with tomato sauce, handful of garbanzo beans, peas and broccoli
Dessert - Black bean brownie with a few chocolate chips
One of my new favorite things is to blend 8-10 bananas and carob powder. Carob powder has so many great nutrients and no caffeine. It contains a number of nutrients is high in fiver and vitamins A, B, B2, B3 and D. So for anyone living in a not-so-sunny place and craving some vitamin D, just eat some carob. For all of us HCRVs out there, carob is a pod from a fruit tree. The pod is roasted, so technically it’s not raw. Then the pod is ground into a powder and VOILA! the best chocolate substitute out there :)
Cauliflower, 4 mangos, mixed greens, green onions and a squeeze of lemon juice blended with dates :)

1/4-1/3 bag of frozen peas thawed
1/3 of an avocado
1/2 lemon squeezed
dash of cayenne pepper
(blend all above ingredients)
mix in 1 diced tomato and some dice sweet onion
serve with sliced veggies and enjoy!
